Back for breakfast

Today was my "long run" day. Always nice to get through it & not have to worry about another (longer) one for another week! One of the many things I think about is what I'm going to have for breakfast once I get home. Seems silly, but it is very serious--I'm a breakfast junkie. Huge fan.
Nice person that I am, last nite I went ahead & got stuff together & prepped for Kevin since he'd be flying solo until I got home. He's totally able to handle the kids & dogs by himself, but I just wanted to minimize some of the chaos that normally happens in the mornings here. Plus, we have to be off & ready to head to church not long after I get back--it's kinda crazy.
So I decided to try a new recipe for breakfast. I baked it last nite & then Kevin just had to reheat it this morning. It's called Baked Oatmeal--now don't let the name turn you off, it's sort of like a breakfast oatmeal cookie except healthier. Kevin's not a big oatmeal fan, but he liked it. I've just polished off my 3rd piece of it--hey I ran 7.5 miles this morning! No guilt here!
So here it is:
Preheat your oven to 350 & grease an 8x8 baking dish
Mix together 3 cups rolled oats, 1 cup raisins or dried fruit (optional), 1/4 c. sugar, 2 tsp. baking powder, 1 1/2 tsp. cinnamon, & 3/4 tsp. salt together in a large bowl.
Then, wisk together 1/2 c. applesauce, 1/2 c. plain yogurt, 1/2 c. milk, 1/4 c. canola oil, and 2 eggs until smooth. Pour into oatmeal mix, stir, then pour into baking dish.
Mix 2 Tblsp. brown sugar (more if you like a sweeter oatmeal) & 1/4 tsp. cinnamon & sprinkle over oatmeal. Bake 30-40 min. or until toothpick comes out clean. Cool & cut into squares.
Can serve w/milk, yogurt, or fruit over it.
So for me, that was worth running home for. That plus some scrambled eggs, sausage, chocolate milk (really good post workout--seriously!), Zimbabwe coffee that Kevin bought, oh & these guys too!
